Power Protein Cookies

These cookies have become a staple for me. I find that most "Protein Bars" have a horrible aftertaste, and I don't care for them. They are also expensive. I bake a batch of these and they last for 2-3 weeks. I often have a protein drink, TJ's Chocolate Whey Protein powder and water, with one for a satisfying post work out snack.

  • 2 large or 3 small, very ripe bananas
  • 1 cup Trader Joe's organic low fat plain yogurt, soy milk, or low fat milk
  • 1 cup Nulaid Redi-eggs(from TJ's), or 4 large eggs
  • 2 Tablespoons vanilla
  • 1/2 cup unsweetened, shredded coconut
  • 1/2 cup TJ's dry roasted slivered almonds
  • 1 cup TJ's orange-cranberries
  • 2 cups organic toasted oatmeal ( from TJ's)
  • zest from 1 large orange
  • 2 cups MetRx vanilla protein powder (from TJ's)

1. Mash the bananas in a large mixing bowl and add all of the wet ingredients. Add the oatmeal, stir and let soak for a few minutes while you zest the orange. Add the rest of the ingredients and mix well.

2. Spray 2 cookie sheets with TJ's canola oil spray and drop the dough on the sheets with a 1/2 cup cookie scoop. Flatten slightly and bake in a 350 degree oven for 20 minutes. I broil them for a minute or two just to brown the tops.

3.Once cool, freeze any that you won't eat within 2 days, as they are very moist and will spoil. I pop them from the freezer into the microwave for 40 seconds and they smell like warm banana bread.
